Potato Latkes for Hanukkah

Hanukkah is my absolute favorite holiday. It has everything: winter (unfortunately not in Israel this year), candles, doughnuts, latkes – and presents! If you make your latkes the right way, so that they’re crispy outside and meltingly soft inside, they’ll make your stomach – and heart – happy!

Potato Latkes

Makes about 12.
The less egg you use the better your latkes will be.
If you’re not planning on frying them immediately, squeeze the excess water out of the zucchini.

Combine and fry:

4 medium peeled and grated potatoes
2 zucchini – grated (peel on)
2 scallions
1 egg
2 Tablespoons of flour
salt and freshly ground pepper

Without all the grating and effort

Even so -
It can taste
Exactly like a sweet potato latke!

How do you do it?!

Slice sweet potatoes (or yams) into thick rounds. Drizzle generously with olive oil and salt, mix and roast at 400 degrees until ‘caramelized’ – soft and golden.

Mix crème fraiche with lots of finely chopped chives. Place a dollop of crème fraiche on every sweet potato and eat in a single bite. Now tell me, just like sweet potato latke or not?!

The best latkes ever. made them yesterday and four very picky kids had three and four portions. now we owe the adults another round.
